Dry white wine was distilled twice in a Charente pot still according to the traditional methods of the region. The blend includes exclusively organic eaux- de-vie aged from 10 to 12 years in oak barrels, 35% of which are new. CERTIFICATION: French Organic Agriculture Standards: Agriculture Biologique FR BIO10 TASTING NOTES: Generous aroma offers up attractive scents of fig, cinnamon and vanilla. Second pass finds raisins, hints of cedar and dried flowers. The bouquet follows through to an elegant, middle weighted profile of dried fig with hints of nougat carried by a pantry of sweet spices through to the clean, drying aftertaste. Lovely cognac in the lighter, drier mould and an intermediary style.
